    Nutella Cupcakes

    What is a gal to do, especially one who is time-strapped and love DIY desserts to bits? Find fail safe recipes that are simple, simple, simple!

    Nutella day which occurs every February 5 has this fabulous website which contains such recipes. I found a dead simple 4-ingredient (yes, 4!) recipe and embarked on it straight away. The first attempt was a boo-boo as I allowed the cupcakes to overbaked and end up with killer cupcakes. For this second attempt which I did just last night, I watched the baking like a hawk and everything turned out ok! :)

    The recipe is taken from Savory Sweet Life.

    Recipe (Yields about 30 mini cupcakes)
    1/2 cup Nutella spread
    1 large egg (weight at least 56g with shell)
    5 tablespoons (75g) plain flour
    1/2 cup chopped hazelnuts (I did without for the 2nd round)

    Instructions
    1. Preheat the oven to 176 deg C. Line a baking tray with mini cupcake papers.

    2. Using a fork, whisk the Nutella and egg till smooth.

    3. Add the flour in 3 batches, blending well after each addition.

    4. Spoon the batter into the paper cups and bake for about 5 mins.

    5. The cupcakes are ready when a toothpick inserted in is gooey with crumbs.

    6. Remove to cool on racks immediately.
    7. Serve immediately or cover and store at room temperature for up to 3 days.

    P.S. I had adapted some of the steps as I find it easier to manage the batter.

    Swimmer's High

    The thing about swimming is that it is gentle on your joints as you are being totally weightless on water. This spells great relief for those of us who does weight bearing cardiovascular activity like running or skipping. Right now, the regular thing I do is swimming at least once a week.

    It had been said that people who run will get a "high" aka a sense of euphoria as the endorphins come gushing through the body. These are commonly known as happy hormones and will keep you happy. I found out
    I too get this high when swimming after 12 laps. Which is double joy for me as now I've got another activity that gives me endorphins! My stamina had not been as good as before but slowly and surely I am
    getting there! It is this that keeps me going and allows me to persevere happily even when I miss some exercise sessions.
    Back to the swimmer's high. It is free, you get to keep fit and good cholesterol ie HDL is produced when you get more active. The morale of my entry is it does pay to work off your butt. So no excuses pals and
    keep fit! :)
